Sugar Cookie Recipe

* Ingredients :

* *1/2 cup Butter

*1 cup Sugar

*1 teaspoon Vanilla

*1/2 cup Heavy Cream or Whipping Cream, Sour Cream or Cream Cheese (I’ve used each one of these variation each gives the cookie a slightly different taste and they’re all yummy!) Note: If you use cream cheese use only 3 cups of flour

*3 and 1/4 cup All-purpose Flour

*1 teaspoon Soda

*1/2 teaspoon Salt

* In a stand mixer on medium-low speed cream together the butter and sugar. Then add the vanilla, egg and cream of your choice and mix just until combined.

* Using Sifter, sift together in a bowl the flour soda and salt and slowly add to the creamed mixture, mixing on low just until barely combined. Dough should be slightly sticky. Do Not Over Mix!

* Then divide the dough into 3 dough balls, flatten dough balls making disk shapes. Now wrap each disk in plastic wrap and refrigerate for about 30 minutes or more.

* Remove 1 dough disk at a time from the refrigerator and rollout disk on a floured surface with rolling-pin or use 2 pieces of plastic wrap, placing the dough disk in the center of 1 of the pieces of plastic wrap and the second piece on top of the dough disk, use rolling-pin and roll out the cookie dough about 1/2 inch thick.

* Use a cookie cutter of your choice and cut out shapes in the rolled out dough. Repeat for each dough disk. Then add to the next dough disk the scraps from the first disk or (discard scraps of dough), continue this technic until all the dough is used. Place cookies on a Silpat covered half baking sheet, 12 cookies per sheet.  For best results refrigerate the cut cookies on baking sheet before baking 5-10 minutes.

* Bake the cookies in a pre-heated 425* F. oven for 8-12 minutes or barely starting to turn golden on the bottom; baking time depends on the size of cookie cutter used. Do Not Over Bake! If you do over bake they will become to hard. Cool on baking sheet.

Glac’e Icing

Ingredients:

*1 pound of Powdered Sugar (3 and 3/4 cup) * 6 tablespoons Whole Milk or (I used 5 tablespoons whipping cream 1 tablespoon water it worked extremely well) you can use other milk but you will have to use more powdered sugar

Instructions:

Whisk together in a stand mixer on medium speed, the milk and powdered sugar until smooth no lumps. Now stir in the light corn syrup and extract.

*6 tablespoon Light Corn Syrup (1/4 cup and 2 tablespoons) *1 teaspoon Vanilla extract, use clear Vanilla extract if you need a white frosting and if you want an Almond Flavor use an Almond extract and use it in the cookie dough too.

Use this recipe for glazing cookies and the piping of the outside of cookies. Piping helps contain the frosting while pipe filling in the center of the cookie.

Use a pastry bag for each color of frosting you want to use, small round tip for piping around the edge and then I used a plastic bottle with a tip lid to fill in the center of the cookies which had a larger opening.

Nautical Cookies

I was lucky enough to be asked to make nautical themed sugar cookies for a birthday party this weekend. A mother/daughter duo happen to have exact same birthday and planned on spending a lovely Saturday on a boat in the bay with loved ones. How cool is that? I’m particularly drawn to the image of anchors, thanks to my love for many things rockabilly related, so I was really excited to make these cookies.

So I did both.

These cookies were all done with the help of my Kopykake projector. I projected the image of the anchor onto the blank cookie canvases to help guide my drawing with royal icing.

The projector was especially helpful with the life preserver cookies. While it might not seem like it, the life preserver cookies were far more difficult to decorate than the anchors. There are three concentric circles (outer background circle, outside edge of the of the life preserver, and inside edge of the life preserver) that leave very little room for error. If one of the circles is more than a little off, there’s just no hiding it.

There are also far more steps to create the life preserver. The background must first be filled and allowed to completely dry. Then, the outside/inside edges of the preserver have to be drawn and left to dry before being filled with white. Once that is left to dry, the red accents are drawn on. Oh yeah, and there’s the rope and additional red to cover the rope. See what I mean? Surprisingly complex stuff here!

What do you think? My husband, who has seen just about everything I’ve made, was pretty damn impressed. If I can make something that gets unsolicited props from him, I know I’m on the right track.

3D Sailboat Cookies {Decorating Video and Sailboat Template}

Hello again sweet friends! With summer in full swing, I’m happy to share this little sweet project with you – 3D sailboat cookies.

Before I jump into the tutorial, there are a few important points to know about before beginning the project. First off, it’s important that the cut-out cookie recipe you use as the base for the sailboat hold their shape well. The key to these cookies keeping their shape lies not only in the combination of ingredients (exact measurement in baking is important) and omission of the leavening agent (i.e. baking powder), but in some crucial points in the process. You can find a whole post dedicated to cookies keeping their shape  here .

Cookie Recipe

I used my classic sugar cookie recipe for these, which you can find here . If you’d like to try a different cookie base, other recipes can be found  here . It helps to roll your dough quite thin by the way. My pieces are approximately 0.5 cm thick.

If you’re decorating these at a time when the humidity in your area is high, having a de-humidifier on in the room you’re working in will help the cookie dry well and prevent icing from bleeding. How to Make a 3D Sailboat Cookie

If you’ve ever made a gingerbread house, the process to putting together this cookie sailboat is the same. As with a gingerbread house, the recipe for the base and the icing make a huge difference. You can find the cookie recipes here , as well as a video on how to put a gingerbread house together  here . I’ll also share the basics below.

Sailboat Cookie Template

If you’d like to use the same template I used for my sailboats, print and cut out the template shapes , place them on your rolled out dough, and cut with a paring knife, tiny roller, or exacto knife. After the pieces have been baked you can decorate them, let the pieces dry, and assemble.

Decorating and assembling are quite straightforward, just make sure the icing you use to assemble the pieces together is a nice thick royal icing, not the same consistency as a cookie decorating icing.
