May 2015 dick portillo reflects on sale of eponymous restaurant chain.

Chicago, Illinois, May 22, 2015  — Visit a Portillo's restaurant at lunchtime and you'll see a steady stream of customers ordering Italian Beef sandwiches, Chicago-style hot dogs, french fries and chocolate cake shakes. Recent patrons might have caught a glimpse of Dick Portillo placing his own less decadent order: a single hard boiled egg. There was a reason for his restraint. The founder of the eponymous chain had a big dinner celebration later that night and he didn't want to be too full. 

That discipline and methodical planning shows up in other facets of Portillo's life, including how he picked a private equity firm to take over his self-made empire. As his business hit 51 years in April 2014, he said he was proud of what he had accomplished. But to take Portillo's to the next level, he knew he needed outside financing. "I was very leery of who I talked to," said Portillo, 75. "I wanted to see who would baby this more, and keep the culture."

A self-proclaimed "systems junkie," Portillo put the chain's 38 locations up for sale last year. He quickly had two dozen suitors trying to get their hands on the popular chain. Berkshire Partners was the winning bidder even though, Portillo said, its offer was lower than some others. He said he dismissed a higher offer because it included plans to quickly take Portillo's public; he worried the firm would make hasty changes to try and grow too quickly. 

One of the things he liked about Berkshire was that it wasn't a restaurant operator looking to replace Portillo's tried-and-true methods with its own restaurant operating systems. A Berkshire official echoed those ideals."We don't have any desire to change the formula at all," said Mike Miles, who is now executive chairman of the Portillo's chain. "The last thing you'd want to do is mess with that formula and mess with that business." Miles said Portillo now is helping him interview prospective CEOs for the chain.

Portillo said his restaurant's large menu and various processes, which include preparing nearly everything but the french fries at massive commissaries, differs from chains such as Chipotle Mexican Grill, which has a more limited menu and list of ingredients. "It is complex, it's very complex. It's also extremely successful."

The history buff — he has retraced the sailing path of Christopher Columbus, among other adventures — compares the success of Portillo's business model to building a moat outside a medieval castle to block enemies. "My moat is the complexity of the business and it helps keep the competition away," Portillo said. 

Portillo's revenue per store is unheard of in fast-food or fast-casual restaurants. An average McDonald's in the United States, for example, brings in nearly $2.5 million in annual revenue. The average newer Portillo's brings in $7 to $8 million. A higher-volume location in Downers Grove sells around $2 million of salads a year, one of many statistics Portillo rattles off. Portillo sees his restaurants as more of a special destination than other fast casual chains. The wide variety means families linger, even with no kids' menus or toys. The company has shipped its food to every state for in-home celebrations.

Neither Portillo nor Miles would discuss the financial terms of last summer's acquisition nor the chain's profitability. But Miles, an advisory director at Berkshire Partners with years of restaurant and retail expertise, was quick to say that Portillo's "single unit economics are better than anything I've ever seen." Selling the chain has at times been difficult for Portillo, though he said he still believes it was the right decision at the right time. "I have some regrets occasionally, it's not all of the time. It was a big emotional thing for me," Portillo said of selling his business. His journey started 52 years ago, when he scraped together $1,100 to set up a hot dog stand in a 6- by 12-foot trailer with no running water. 

Through his new company R&S Growth Management, Portillo oversees real estate investments. Those investments include the land under most of Portillo's restaurants — he leases the space back to Berkshire Partners — along with other ventures such as shopping centers and apartments. Portillo said he aims to buy the land for future Portillo's locations where the space is for sale and would then lease the space to Berkshire Partners. He does not own the land for the upcoming Rockford and Homewood locations, the first new Portillo's set to open in nearly two years.

Portillo continues to have connections to his former staff and customers. On a recent weekday, he posed for photos with patrons at the Downers Grove location. His fans include Scott Winch, a landscaper who said he visits the restaurant daily and is partial to the jumbo char dog. "We miss ya boss, we miss ya," Winch, 47, told Portillo as they embraced. "You're the man." One worker brought Portillo a handful of flowers, while another quickly delivered his meal — that single egg — to his table. 

After coffee, a "good breakfast" such as oatmeal with sliced banana, and a berry, almond milk and protein smoothie, Portillo's typical lunch is fruit and fat-free cottage cheese. He tends to wake up between 4:30 and 5:30 a.m., work out each morning and eat healthy meals, albeit with some indulgence. After all, one of his investments is an 18 percent stake in the Oak Brook location of Gibsons Bar & Steakhouse, where he planned to dine later that same night. More often, however, dinner is lighter. He said he eats at Chipotle a lot, and is a fan of its black beans and brown rice.

Portillo, a former Marine Corps member and marathon runner, said he was also ready to slow down and "enjoy life" a little bit." There was no balance in my life. It was pretty much all work until about 10 years ago. And I've started going to more funerals than weddings," Portillo said as his sat in his former Oak Brook office. "I would like to spend more time with my grandchildren and children, more time on my boat, and at the same time see the name all over the country, if possible. That could not happen if I would have remained in the position I was in."

Portillo has a new office in Oakbrook Terrace with a view of the Chicago skyline, roughly 2-1/2 miles from Portillo's headquarters. The new office serves as meeting place for Portillo, his chief administrative officer and the managing director of R&S. It's also a place to showcase everything from Han Dynasty swords to guns and machetes used by U.S. Marines. Photos of Portillo's family, his restaurants and his adventures adorn tables and walls throughout the space. There are also a few quotations that highlight Portillo's thinking and business strategy. Two sayings get prominent placement on both his new desk and in Oak Brook, where his former office has been transformed into a meeting area. The top silver plaque reads D.W.Y.S.Y.G.T.D. – short for "Do what you say you're going to do." Below it, another plaque reads, "When You Have Somebody By The Balls Don't Let Go To Get A Better Grip." 

In a hallway outside his Oakbrook Terrace office sits a sculpture titled Self Made Man. The piece, by Bobbie Carlyle, depicts a man carving himself out of stone. It was a Christmas gift from Portillo's wife, Sharon, whom he married in 1959. Portillo showcases his commitment to her outside each restaurant, with "Dick Loves Sharon" carved into the sidewalk cement, and hides the same message in the decor of new restaurants. 

He still spends time working on the Portillo's business as a consultant to Berkshire Partners, work that includes helping the firm interview potential CEOs for Portillo's. One of Portillo's sons, Michael, still works for the restaurant, training managers. Portillo plans to attend the grand opening events for the chain's Rockford location, which is set to open on June 9.

Portillo said the two toughest and most important things Berkshire needs to focus on are site selection — "so far I've been using my gut instincts" — and training. He recalls having to pull aside managers who were not treating workers properly, whether that was overhearing swearing in the kitchen or stopping by a drive-thru lane where an order taker outside on a sub-zero night was not relieved of the frigid duty quickly enough. Portillo said he made the manager gear up and stand outside for the same long 45 minutes.

Berkshire Partners is getting ready to open three locations in 2015, with plans for five in 2016. It's paying close attention to places with Chicago transplants, much as Portillo himself did by opening units in Arizona, for example. So fans on the west coast of Florida, along with those in parts of Wisconsin and Texas, will "probably see" Portillo's restaurants in the next five years, Miles said. "We're very conscious about not trying to go too quickly," said Miles, who said that for now there are no plans to franchise any locations or to take the company public.

Meanwhile, Portillo spends more of his days taking adventurous vacations, such as a one-month tour of Alaska and a trip through the Panama Canal, both on the 112-foot Westport yacht he got in May. "I'm looking for a bigger one," he says, laughing. Like his prior boats, the latest white yacht carries the name Top Dog. The license plate of his black SUV, meanwhile, reads DPTD, for Dick Portillo Top Dog. 

Portillo credited his passion for much of his success. "Sometimes it just gave me more energy to go further, to push." He has photos of the Francis Cabrini housing project on Mohawk Street where he spent part of his childhood on the wall of the new office, just a few feet from photos of one of his homes, a mansion in Oak Brook. "We want to keep Dick as involved as possible," said Miles, who said he meets with Portillo weekly when the septuagenarian is in town. "I don't think his passion for the business has waned at all."

"Top Dog"  is the newest and most advanced 112 Westport on the market.  Her galley skylight, Foredeck design enhancements, VIP stateroom skylights, curved salon door, extensive cabinetry upgrades, enhanced crew stateroom arrangement featuring 3 heads, and multiple upgrades throughout in the master and guests staterooms ensure that there is not a nicer and better equipped example of a 112 available.  Launched in May of 2014, "Top Dog"  has been privately used and maintained by an excellent crew.  Truly a pleasure to show and still shows as clean as when she was launched.

The first serious 112 prospective buyer to view this yacht will buy her.

Walkthrough

Boarding "Top Dog" can be accomplished either by the large swim platform aft, side boarding gates on either side of the Aft Deck, or the boarding gates either side forward of the Salon to the forward walk-around decks.  The yacht has light-weight carbon fiber boarding steps which may be deployed by a single crew member if necessary.

Starting at the Swim Platform, this area is protected by stainless staple rails, has a teak sole, and a 100 gallon gas tank under the platform for tender fueling.  There is an aft entrance to the Crew Quarters, power, water and capstans for the aft dock lines, as well as steps on each outboard side leading up to the Aft Deck.

The Aft Deck has side boarding gates outboard on both sides, a primary entrance to the Crew and Engine Room to starboard, and a full bar with refrigeration and sink to port.  There is also a large LED TV on the port forward bulkhead.  The Aft Deck has an upgraded curved Salon door, large teak dining table with molded aft seating & 5 loose chairs and teak sole.

The full-beam Salon is accessed from both the Aft Deck and forward outboard Foyer entrance doors.  This area features custom furnishings, tables and game table, and wine cooler.  The Salon also features large windows, electric blinds/shades, LED internal overhead lighting, and custom upgraded Mahogany scalloped cabinet doors, stone sole entrance aft by the curved stainless Salon entrance door and carpeting throughout.  The entertainment center is located aft to starboard with a wall-mounted LED TV, entertainment stack concealed in a cabinet below, and the entire yacht is outfitted with Kaleidescape/Crestron entertainment, climate control and lighting/electric blind operation via IPad tablets.

The large formal Dining area features a custom table with place settings and chairs for 8, abundant built-in cabinet storage for dining dishware, dishes, and glassware.

The starboard side forward Foyer has a Day Head, an art niche, staircase leading up to the Pilothouse, large entrance door with companion picture window, and stone sole.  This Foyer leads past the pantry into the upgraded Country Kitchen.

The Country Kitchen is complete with large side-by-side refrigerator with icemaker, double oven, microwave, surface-mounted range with overhead vent hood, a double deep-well stainless sink, 4 additional refrigeration drawers, trash compactor, dishwasher, and island.  The Galley features abundant cabinets for provisioning and cookware storage throughout.  There is a large raised Dinette forward with an LED TV on the forward bulkhead, and an upgraded skylight overhead to enhance the light in this area.  The Galley soles are a dark plank Amtico engineered wood finish.

The VIP Stateroom is accessed down a staircase forward to starboard.  There is an additional full cabinet at the base of the staircase.  The VIP has upgraded skylights to both port and starboard for abundant natural light, built-in dresser banks, vanity and enlarged head.  This stateroom has a centerline queen berth with storage underneath, emergency escape hatch overhead, audio/visual entertainment and lighting which are operated via a Creston IPad tablet, and a walk-in closet.  All guest staterooms feature en-suite heads with a large lighted mirror vanity, storage cabinets, upgraded faucets, Headhunter toilets, and upgraded stone accents to both the counters and shower. 

Back up to the forward port side of the Salon is the port Foyer.  The Foyer features a large entrance door with companion picture window, a large closet with the laundry washer and dryer stack unit for the owner and guest staterooms, additional freezer drawer storage and access underneath the Pilothouse where various ship’s electrical, equipment, and audio/visual central bases are located.  This entrance area has a stone sole to the staircase leading to the lower Foyer landing.  There is abundant hard luggage storage underneath this staircase.

The Master and Guest Staterooms are located amidship and accessed via the lower Foyer.  The Master is full-beam, and features a centerline king berth with gas shock assisted lift and abundant storage underneath Mahogany wood accents, overhead wood detailing and trays, and carpeted sole.  The Master has a forward LED TV, enlarged port lights, abundant chest drawer banks, a companion seat, walk-in closet, and blinds, lighting, and audio/visual entertainment control are all accessed via the Crestron IPad tablet.

The Master Stateroom has entrances forward on both port and starboard, to the his & hers full-beam head.  This head has dual vanities with overhead lighting, upgraded faucets on the vanities, storage cabinets, upgraded dual shower heads, custom upgraded stones on the vanity tops, sole and in the centerline shower, Headhunter heads, and linen closets. 

The Guest Staterooms are located aft of the lower foyer and feature overhead LED lighting, enlarged port lights, and carpeted soles.  The port Guest Stateroom features side-by-side twin berths with storage underneath, a nightstand which can be relocated and the berths joined to create a single large berth, and hanging locker.  The audio/visual entertainment located forward and lighting are operated via the Creston IPad tablet. 

The starboard Guest Stateroom features two side-by-side berths with a nightstand in the center that can be relocated and both berths joined to form a large single large berth.  There is storage underneath each berth accessed by drawers, and a hanging locker.   The audio/visual entertainment located forward and lighting are operated via the Creston IPad tablet. 

Moving up from the entrance Foyer to starboard is the Pilothouse.  The Pilothouse features the full-compliment in navigational electronics; a power actuated custom Stidd helm chair, navigation desk, a large oval-shaped observation lounge with table, 180 degree visibility through large Pilothouse windows, a pop-up LED TV, and a staircase up through a sliding stainless door to port accessing the Flybridge.  

The Flybridge has a centerline helm with 3-Stidd chairs power actuated chairs, teak sole, factory hardtop with overhead LED lighting; a large seating area to starboard with teak table, a full bar with sink, refrigeration, icemaker, grill and bar seating to port.

The Boat Deck is down a few steps aft and features a large hot tub to port, a lounge to starboard, access to staircase via a protected sliding door to starboard, and ample storage for two wave runners and a 15’ RIB tender with davit crane.

The Foredeck of "Top Dog" was redesigned to feature a large Sunpad with more storage underneath and a forward pad located in the bow.

Diesel Fuel System Approximately 5,500 gallons (US) of diesel in one tank separated into three compartments with a transfer system including a pump, meter and distribution manifold. All diesel consumers draw from the center compartment (Day Tank). During normal operations fuel is transferred to the day tank via the transfer pump. Fueling process is via either of two deck fill locations amidships, port or starboard side. Tank is vented to atmosphere on both sides of the vessel. Tank level monitoring is via electronic sensor and display with hi/low level alarms. Tank is all aluminum, welded construction with internal baffles and three divided areas Pumps: fuel transfer pump will have a flow meter and timer Fuel Filters: one dual Sea Pro 8 with isolation valve each main and one Dual Racor 75/500 for each generator Fuel Gauges: sight tubes located in Engine Room and monitoring Fuel Tank: ¼" 5086 alloy aluminum separated tank with dual fills and standard vents, monitoring, and sight        tube level indicators. Approximate capacity: 5,500 gallons Gasoline Fuel System The gasoline system consists of a tank, an air diaphragm pump and hose with nozzle to transfer the gas. New/used oil tanks are fitted in the under sole on centerline in Crew Mess. The new oil tank can be filled directly into tank, starboard side. The capacity is 24 tons and is distributed throughout the vessel via individual room air handlers of various sizes and BTU ratings. There is one (HVAC) keypad the two air handlers in the Master Stateroom, one for the two air handlers in the Galley, and two for the four air handlers that serve the Salon; all other air handlers are each controlled by a separate keypad HVAC: all interior areas air conditioned by at least one HVAC unit. Master & Guest Staterooms have chill   chaser units   Ventilation: Eight exhaust fans, (2) in the master head and (1) in the other heads Marine Air HVAC System: Four compressors and heating pump, independent seawater intake Chillers: 230V-1PH-60Hz, 24 ton Air Handlers: 230V-1PH-60Hz, various BTU as required by volume being treated, utilizing variable speed hi - static DC blowers Make Up Air: For cycling air through the vessel interior Bilge System System consists of five remote-mounted bilge float switches and alarms on all float switches Bilge Pumps: fixed bilge pump system includes two electric 230V AC pumps with 1 ½" PVC lines to each   major compartment with check valves, strainers and priming system Freshwater System The system is comprised of multiple divided and baffled fresh water tanks, two AC supply pumps, suction supply, service and distribution manifolds, two reverse osmosis watermakers, and associated valves, filters, expansion tanks, regulators and gauges. Freshwater wash downs with quick connects are located on all decks Pumps: (2) 220V AC pumps and one 24V DC backup pressure pump with tank Water Tanks: Are stainless steel with an approximate tank capacity of 1,000 gallons. Monitoring system and   sight tube level indicators Watermaker: (2) Sea Recovery SRC AWC 1400-2 (2,800 gallons per day total) Water Filters: (5) micron sediment filters with UV sterilization light Water Heaters: (2) Dual element, fast recovery. (1) 80 gallon and (1) 38 gallon Waste Water System: Black and Gray water is routed to an FRP tank. A certified Marine Sanitation Devise (MSD) is installed for treatment of all wastewater tank level monitoring is via electronic sensor and display with level alarms and all tanks are vented at the boot stripe. Discharge is via MSD or direct overboard via diaphragm pump. Also, a dockside connection is located just aft of the starboard fuel fill Pumps: High capacity solids handling AC diaphragm type MSD: Headhunter MSD treatment with PLC touch screen and Auto-Clor treats black and gray water Holding Tank: tank is composite with an inspection hatch. Tank is electronically monitored and has an approximate capacity of 600 gallons. Husband-and-wife team David and Ann Sutherland tell BOAT how they survived choppy business waters to develop a successful furniture and fabrics empire. Eventually, they made the jump from supplying yachts to owning one, the 39.6-metre Westport 130 All Inn . ...

When you speak with David and Ann Sutherland, you get the feeling they are a perfect match. They finish each other’s sentences, laugh in unison, and the story of how they built their Perennials fabrics company together to complement Sutherland Furniture – now global references in upscale homes and superyachts – show they supported each other all the way.

However, it took a while for David to convince his wife that trading a holiday home in New Mexico for a yacht would be a good idea. He told her it would take at least six months for them to find the right boat. Six months sounded like a reasonable amount of time, and things might happen in the meantime that would snuff out the idea, or so she thought. But instead, things progressed much faster than either of them had anticipated.

In spring 2019, David had lunch with a friend in Dallas, Texas, to ask for his opinion about yacht ownership – a great idea on a personal level but not so much financially was his friend’s answer. However, his friend knew a yacht broker in Fort Lauderdale, called him, and before the cheque arrived, David had already made a connection with him over the phone. David also soon lined up a potential captain, someone he and Ann knew and trusted from their experience as co-owners of a previous boat.

Before they knew it, broker Pete Woods and Captain Tony Stewart had vetted four yachts. Six weeks later the Sutherlands were the owners of a 2008 Westport 130 they called All Inn . It was the right size, the right fit for both family time and charter, plus it already had some of their company’s furniture on board. The pieces had been there since the yacht’s launch and were in great shape, which pleased them because it’s part of the company’s ethos. “The best way to battle unsustainability is to buy something that is good quality and good design and will last a lifetime,” says David.

They chose it over a new Westport 112 that Ann was “swooning over” because the larger Westport had more room for the water toys, so important for a proper charter experience. And charter was always part of their plan. Although it would require a serious refresh, they were soon “all in” as the new and sole owners of the yacht. They added the second “n” as a twist. “We wanted something fun and appropriate and different,” says Ann of the name and they playfully riffed on the theme. “Our little tender is All Out and then we have an inflatable called All About ,” she says.

The yacht’s 2019 six-week refit created a fresh and hospitable floating inn – offered for charter through Fraser – where the couple’s expertise in furniture and fabric design is on display. It was important to get the work done quickly so they could get the boat on the charter market and their crew engaging with charter guests.

Originally from Oklahoma – as is Ann – and armed with a marketing degree and a minor in petroleum land management, David went to work for Shell Oil straight from college. He soon realised that working for an international conglomerate wasn’t for him. A friend introduced him to the world of furniture and he never looked back. In the late 1980s, he had an opportunity to head the international marketing efforts of Summit Furniture. “I learned about sourcing, I learned about quality, I learned about construction,” he says.

After a dip in business brought about by the savings and loans crisis, David decided to leave Summit and go it alone. “I knew that all I needed were special and individual designs in order to continue in this field,” he says. He asked his good friend, the late American designer John Hutton, if he’d create pieces for him. Hutton, who drew inspiration from museum pieces and loved classic forms, was then the lead designer for Donghia and he agreed on the condition that the New York-based company, which supplied designers throughout the US, would sign off on the idea. As it turns out they did – in a big way.

“I met the president of Donghia in New York and asked him if John could design for me. He said, ‘Yes, but I have one caveat: when you get the line ready, I want to represent it in all our showrooms.’ So, not only did I get a designer in that meeting, but I got distribution through six cities in the US at the same time,” David says. “Then we designed our outdoor furniture, which frankly was quite unique in the outdoor furniture industry; it was about living, not perching. What John brought to the table was the idea that the outdoors should be an extension of the indoors.”

Shortly after, he was reacquainted with Ann, an interior designer who had come to his showroom to pick out a few pieces. When they spoke for the first time they found out they had more in common than an interest in furniture design. They soon began dating.

Ann enjoyed travelling with David – “It was a discovery for me to go to all these shows and it was a great learning time too,” she says – but eventually she needed an outlet to express her creativity. David had an idea. His first furniture collection with Hutton consisted of 35 pieces that were designed with large cushions for comfort, but the choices for upholstery were quite limited at the time. “The problem was that the only material available to sustain the elements was geared to marinas; they only had primary colours and a hard finish,” he says.

When he talked to Ann about his idea of developing better fabrics for outdoor use, she was excited. She provided the seed money, he provided the business structure, and they became partners on a venture that would become easy-care luxury fabric division Perennials in 1996.

Ann made it look easy but says in reality it was a steep learning curve. “We needed it in the market, so I jumped in and really had no idea how hard it would be,” she says. “You make your mistakes and you learn. We started very small, and David and I were rolling the fabric out and cutting it for shipping.” Despite some early hiccups and a few sleepless nights – David reassuring Ann when she battled self-doubt, she says – the business grew exponentially, exceeding $125 million (£90m) of sales revenue 20 years after they began.

“We knew the outdoor industry could be more like the indoor industry,” says David. “The design had to be right, as well as the comfort.” Just as David did with Sutherland furniture, the couple reached out to big-name designers to add their special stamp to a line of products using their easy-care fabrics. “We have had good success with British designers like Kelly Hoppen and Tim Gosling ; the UK has been very good to us. That’s kind of where we started with the boating world as well,” he says.

It was in 2008, on the heels of a disastrous September that saw the collapse of Lehman Brothers, that they discovered the pleasures of yachting for themselves. “David got very anxious and nervous about the business, and friends invited us on this boat off the New England coast. We had not been on a yacht that size together as guests before. And it was shocking really because the whole world looked like it was crashing and then here were all these people on these nice motor yachts,” Ann recalls. “We were having a wonderful time and the water was beautiful. David was kind of in shock for two days and then he realised that there still was money somewhere in the world. And so we ended up having a really wonderful experience because it was just a release from that anxiety.”

The New England trip gave David a new perspective on the economic crisis, as well as an appreciation for yachting. “I decided that money is like energy – it never goes away. It just changes form and it changes hands. And I have not forgotten that,” he says.

It was also around that time that they decided to increase their marketing efforts in the yachting sector. “We had shown our products at Maison&Objet in Paris for a number of years. And one year, it may have been 2008 or 2007, Maison decided to set up a special centre for outdoor furniture and fabrics. And as we were working that particular show, we came up with about 300 business cards, and 200 of them were yacht companies. So we said, well, what are we doing in Paris? We need to be down in Monaco,” David says. And they’ve been a regular presence at the show ever since – except, of course, for the peculiar year of 2020 when the show did not take place due to the Covid-19 pandemic.

Yachting seems a natural fit and being around boats has inspired new designs and products. “I do think more about yachts specifically now,” says Ann who became CEO of Perennials in 2018. “We developed pillows because the yachts like to have their own unique toss pillows,” she says. Green, she adds, is a no-no. “That’s a land colour,” she says. “It’s really fun to think about what is going to work on a boat.” And now she can try it on All Inn first.

More recently they got into rugs to cover the hardwood floors that are currently so popular on boats. Like their sofa fabric, the rugs will wipe clean easily, relieving crewmembers of the terror of spilled syrah or squid ink. The pair still work with some of the same suppliers in Mexico that they chose early on but have expanded to other countries such as India, where Perennials makes its rugs. Ann recently travelled there to inaugurate a second facility. And they are also busy working on the launch of a new 150-square-metre showroom in Mumbai with the intent to market Perennials and Sutherland there.

As well as their aesthetic appearance, carpets on floors can also have a practical purpose – as the Sutherlands have discovered first-hand. “On a long crossing from Antigua to St Barths (a notoriously gnarly trip, especially during the Christmas winds), David and I both ended up lying on the floor watching television,” she says.

The couple are constantly innovating and adding new collections. Recently, for example, they worked with Florida-based designer Allison Paladino on a collection of easy-to-clean velvet pillows and Tibetan-knot rugs with geometric patterns and “coastal elegance”. On the furniture side, there is a new collection with Monica Armani.

And All Inn has proven a good test bed for new ideas and a constant source of inspiration, enough perhaps to lead David and Ann to a new build where they’ll express their design ethos fully. The All Inn experience has planted a seed. “I’ve got the bug because now I want to do a whole new boat,” Ann says. And on this, too, they now seem to agree.

Westport 130 Top Dog features a Semi-displacement GRP hull and GRP superstructure. She was built to American Bureau of Shipping classification society rules.

Westport 130 Top Dog is equipped with a 2 x Naiad stabilisation system which reduces roll motion effect and results in a smoother more enjoyable cruising experience underway.

Performance

Powered by 2x MTU 16V2000 M96L 2 x 2600 hp engines and driven by Shaft drive Motor Trideck Westport 130 Top Dog is capable of a top speed of 24 knots, and comfortably cruises at 20 knots. With her 36075 litres fuel tanks she has a maximum range of 3450 nautical miles economic cruising speed. Her water tanks carry 6738 litres of fresh water.
